Our Story

At Cooper’s Cask Coffee, our journey began with a passion for innovation—starting with our signature barrel-aged coffees, where single-origin beans are aged in freshly emptied whiskey, rum, and wine barrels to create uniquely rich flavor profiles. This dedication to quality and exploration led us to expand our offerings, and we now proudly feature over 30 single-origin coffees sourced from renowned regions worldwide, including Ethiopia, Kenya, Sumatra, and Rwanda. Each variety is carefully selected and roasted to highlight its distinct characteristics, allowing coffee enthusiasts to experience the diverse tastes and aromas that different terroirs have to offer.

 

Building upon this foundation, in 2024, we launched GO MENTAL COFFEE to explore the fusion of premium coffee with functional health benefits. Our mushroom coffee blends USDA Organic Grade 1 beans with high-quality mushroom  like lion's mane, cordyceps, and reishi to name a few. By overseeing the entire production process in-house, we ensure each batch meets our rigorous standards, delivering a coffee that supports mental clarity and overall well-being without sacrificing flavor.

Hello! I'm John Speights, founder of GO MENTAL COFFEE and Cooper’s Cask Coffee. My journey into coffee roasting began with a deep appreciation for the art and science behind each cup. Over the years, I've dedicated myself to sourcing the finest beans and perfecting roasting techniques to highlight their unique flavors. With GO MENTAL COFFEE, I aimed to create a blend that not only delights the palate but also supports mental clarity and well-being. By combining USDA Organic Grade 1 coffee beans with top-tier sourced mushroom, including lion's mane, cordyceps, and reishi, we've crafted a coffee that stands out in both taste and function. Every batch is roasted in-house, ensuring quality and consistency in every cup.

Everything is roasted in-house and to-order. We never have old coffee sitting around waiting to be sold. We roast it when you order it and we pride ourselves on continuously learning about our customers and our industry so we can be the best at what we do to serve you better. We want to create a coffee culture that is built around quality, sociability, and affordability so that everyone can enjoy our product and share in our outreach. Our goal is to continue to grow our business in ways that will allow us to give more, this will include things like scholarships for local graduating seniors, food programs, and much more!
